Vegetarian Spaghetti Bolognese

This is a delicious Vegetarian Spaghetti Bolognese recipe that is sure to please.

Serves 4

Ingredients

  • 2 tablespoons olive oil

  • 1 onion, chopped

  • 2 cloves garlic, minced

  • 1 red bell pepper, diced

  • 1 (14.5 ounce) can diced tomatoes

  • 1 (15 ounce) can tomato sauce

  • 1 teaspoon dried oregano

  • 1 teaspoon dried basil

  • 1 teaspoon sugar

  • 1 teaspoon salt

  • 1/2 teaspoon freshly ground black pepper

  • 1/2 teaspoon red pepper flakes

  • 1 (15 ounce) can cannellini beans, drained and rinsed

  • 1/2 cup vegetable broth

  • 8 ounces spaghetti

  • 1/4 cup freshly grated Parmesan cheese

Instructions

  • Heat the olive oil in a large skillet over medium heat.

  • Add the onion, garlic and bell pepper and cook for about 5 minutes, stirring occasionally, until the vegetables are softened.

  • Add the diced tomatoes, tomato sauce, oregano, basil, sugar, salt, pepper, red pepper flakes and cannellini beans.

  • Stir in the vegetable broth and bring the mixture to a simmer.

  • Reduce the heat to low and simmer for 20 minutes, stirring occasionally.

  • Meanwhile, cook the spaghetti according to the package directions.

  • Drain the spaghetti and return it to the pot.

  • Pour the bolognese sauce over the spaghetti and toss to combine.

  • Sprinkle the Parmesan cheese over the top and serve.
