Vegetarian Spaghetti Bolognese
This is a delicious Vegetarian Spaghetti Bolognese recipe that is sure to please.
Serves 4
Ingredients
2 tablespoons olive oil
1 onion, chopped
2 cloves garlic, minced
1 red bell pepper, diced
1 (14.5 ounce) can diced tomatoes
1 (15 ounce) can tomato sauce
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon sugar
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon red pepper flakes
1 (15 ounce) can cannellini beans, drained and rinsed
1/2 cup vegetable broth
8 ounces spaghetti
1/4 cup freshly grated Parmesan cheese
Instructions
Heat the olive oil in a large skillet over medium heat.
Add the onion, garlic and bell pepper and cook for about 5 minutes, stirring occasionally, until the vegetables are softened.
Add the diced tomatoes, tomato sauce, oregano, basil, sugar, salt, pepper, red pepper flakes and cannellini beans.
Stir in the vegetable broth and bring the mixture to a simmer.
Reduce the heat to low and simmer for 20 minutes, stirring occasionally.
Meanwhile, cook the spaghetti according to the package directions.
Drain the spaghetti and return it to the pot.
Pour the bolognese sauce over the spaghetti and toss to combine.
Sprinkle the Parmesan cheese over the top and serve.
