Vegetarian Fried Rice

This is a delicious and easy vegetarian fried rice recipe with Purple Lettuce, Rice, and Carrots.

Serves 4

Ingredients

  • 3 tablespoons vegetable oil

  • 1 cup cooked white rice

  • 1 cup cooked brown rice

  • 1/2 cup diced carrots

  • 1/2 cup diced purple lettuce

  • 1/4 cup diced onion

  • 1 tablespoon minced garlic

  • 1/2 teaspoon ground ginger

  • 2 tablespoons soy sauce

  • 1 tablespoon sesame oil

  • 2 tablespoons chopped fresh cilantro

  • 1 teaspoon sesame seeds

Instructions

  • Heat the oil in a large skillet over medium heat. Add the cooked rice, carrots, purple lettuce, onion, garlic, and ginger. Cook, stirring occasionally, for about 5 minutes.

  • Add the soy sauce, sesame oil, and cilantro. Cook, stirring occasionally, for an additional 3 minutes.

  • Stir in the sesame seeds and cook for 1 more minute.

  • Serve warm and enjoy!
