Vegetable Noodle Stir Fry
A delicious and nutritious Vegetable Noodle Stir Fry with Carrots, perfect for a quick and easy meal.

Ingredients
2 tablespoons sesame oil
1 onion, diced
2 cloves garlic, minced
2 carrots, peeled and diced
2 cups broccoli florets
1 red bell pepper, diced
1 cup snow peas or snap peas
2 tablespoons soy sauce or tamari
2 tablespoons rice vinegar
1 tablespoon honey or maple syrup
1 teaspoon freshly grated ginger
1 teaspoon toasted sesame seeds
3 cups cooked noodles of your choice
Salt and pepper, to taste
Instructions
Heat the sesame oil in a large skillet over medium-high heat.
Add the onion and garlic and cook, stirring often, until the onion is softened and beginning to brown, about 5 minutes.
Add the carrots, broccoli, bell pepper, and snow peas and cook, stirring often, until the vegetables are tender and starting to brown, about 8 minutes.
Meanwhile, whisk together the soy sauce, rice vinegar, honey, ginger, and sesame seeds in a small bowl.
Add the cooked noodles to the skillet and pour the sauce over the noodles and vegetables.
Toss to combine and cook until the noodles and vegetables are heated through and the sauce is thickened, about 3 minutes.
Season with salt and pepper to taste and serve immediately.
