Vegetable Noodle Stir Fry

A delicious and nutritious Vegetable Noodle Stir Fry with Carrots, perfect for a quick and easy meal.

Ingredients

  • 2 tablespoons sesame oil

  • 1 onion, diced

  • 2 cloves garlic, minced

  • 2 carrots, peeled and diced

  • 2 cups broccoli florets

  • 1 red bell pepper, diced

  • 1 cup snow peas or snap peas

  • 2 tablespoons soy sauce or tamari

  • 2 tablespoons rice vinegar

  • 1 tablespoon honey or maple syrup

  • 1 teaspoon freshly grated ginger

  • 1 teaspoon toasted sesame seeds

  • 3 cups cooked noodles of your choice

  • Salt and pepper, to taste

Instructions

  • Heat the sesame oil in a large skillet over medium-high heat.

  • Add the onion and garlic and cook, stirring often, until the onion is softened and beginning to brown, about 5 minutes.

  • Add the carrots, broccoli, bell pepper, and snow peas and cook, stirring often, until the vegetables are tender and starting to brown, about 8 minutes.

  • Meanwhile, whisk together the soy sauce, rice vinegar, honey, ginger, and sesame seeds in a small bowl.

  • Add the cooked noodles to the skillet and pour the sauce over the noodles and vegetables.

  • Toss to combine and cook until the noodles and vegetables are heated through and the sauce is thickened, about 3 minutes.

  • Season with salt and pepper to taste and serve immediately.
