Spinach Paneer Curry

A delicious Spinach Paneer Curry with a creamy, flavorful sauce, perfect for a vegetarian meal.

Serves 4

Ingredients

  • 2 tablespoons coconut oil

  • 1 teaspoon cumin seeds

  • 1 teaspoon ground coriander

  • 1 teaspoon turmeric

  • 1 teaspoon garam masala

  • 1 teaspoon ground ginger

  • 1 teaspoon salt

  • 2 cloves garlic, minced

  • 1 jalapeno, seeded and minced

  • 1/2 cup water

  • 1 (14-ounce) can full-fat coconut milk

  • 1 (10-ounce) package frozen spinach, thawed

  • 1 (14-ounce) package paneer, cubed

  • 1/4 cup cilantro, chopped

Instructions

  • Heat the coconut oil in a large saucepan over medium heat. Add the cumin seeds and cook for 1 minute until fragrant.

  • Add the coriander, turmeric, garam masala, ginger, salt, garlic and jalapeno. Cook for 1 minute, stirring constantly.

  • Add the water and coconut milk, stirring to combine. Bring to a simmer and cook for 5 minutes.

  • Add the spinach and paneer and cook for 5 minutes, stirring occasionally.

  • Remove from heat and stir in the cilantro. Serve over cooked basmati rice.
