Spinach Paneer Curry
A delicious Spinach Paneer Curry with a creamy, flavorful sauce, perfect for a vegetarian meal.

Ingredients
2 tablespoons coconut oil
1 teaspoon cumin seeds
1 teaspoon ground coriander
1 teaspoon turmeric
1 teaspoon garam masala
1 teaspoon ground ginger
1 teaspoon salt
2 cloves garlic, minced
1 jalapeno, seeded and minced
1/2 cup water
1 (14-ounce) can full-fat coconut milk
1 (10-ounce) package frozen spinach, thawed
1 (14-ounce) package paneer, cubed
1/4 cup cilantro, chopped
Instructions
Heat the coconut oil in a large saucepan over medium heat. Add the cumin seeds and cook for 1 minute until fragrant.
Add the coriander, turmeric, garam masala, ginger, salt, garlic and jalapeno. Cook for 1 minute, stirring constantly.
Add the water and coconut milk, stirring to combine. Bring to a simmer and cook for 5 minutes.
Add the spinach and paneer and cook for 5 minutes, stirring occasionally.
Remove from heat and stir in the cilantro. Serve over cooked basmati rice.
