Purple Cabbage Slaw

This crunchy and flavorful Purple Cabbage Slaw is a great way to use up that purple cabbage! It's a delicious side dish or topping for tacos, burgers, and salads.

Ingredients

  • 1/2 head purple cabbage, shredded

  • 1/4 cup red onion, diced

  • 1/4 cup fresh cilantro, chopped

  • 3 tablespoons olive oil

  • 2 tablespoons lime juice

  • 1 tablespoon agave nectar

  • 1/2 teaspoon ground cumin

  • 1/4 teaspoon sea salt

Instructions

  • In a large bowl, combine the shredded cabbage, red onion, and cilantro.

  • In a small bowl, whisk together the olive oil, lime juice, agave nectar, cumin, and salt.

  • Pour the dressing over the cabbage mixture and toss to coat.

  • Serve immediately or refrigerate for up to 1 day.
