Pork Roast with Apples and Onions
This Pork Roast with Apples and Onions is a delicious and easy to make one-pot meal.

Ingredients
1 tablespoon extra-virgin olive oil
2 tablespoons butter, divided
1 large onion, chopped
2 cloves garlic, minced
2 pounds boneless pork roast, trimmed of excess fat
1 teaspoon fine sea salt, divided, to taste
¼ teaspoon freshly ground black pepper
1 teaspoon dried thyme
2 large tart apples, such as Granny Smith, cored and cut into wedges
1 cup chicken broth
2 tablespoons apple cider vinegar
1 tablespoon honey
1 teaspoon Dijon mustard
Instructions
Preheat oven to 350°F (175°C).
Add olive oil and 1 tablespoon of the butter to a large Dutch oven and heat over medium-high heat.
Once the butter has melted, add the onion and garlic. Cook, stirring often, until the onion has softened and is turning translucent, about 6 to 8 minutes.
Add the pork roast to the pot and season with ½ teaspoon of the salt and the pepper.
Cook until the pork is lightly browned on all sides, about 5 minutes.
Add the thyme, apples, chicken broth, apple cider vinegar, honey and Dijon mustard. Bring to a simmer and season with the remaining ½ teaspoon of salt.
Cover the pot and transfer to the preheated oven. Roast for 45 minutes.
Remove the lid and roast for an additional 15 minutes, or until the pork is cooked through and the apples are tender.
Remove the pot from the oven and stir in the remaining 1 tablespoon of butter.
Taste and season with more salt and/or pepper, if desired.
