Pork Roast with Apples and Onions

This Pork Roast with Apples and Onions is a delicious and easy to make one-pot meal.

Serves 4

Ingredients

  • 1 tablespoon extra-virgin olive oil

  • 2 tablespoons butter, divided

  • 1 large onion, chopped

  • 2 cloves garlic, minced

  • 2 pounds boneless pork roast, trimmed of excess fat

  • 1 teaspoon fine sea salt, divided, to taste

  • ¼ teaspoon freshly ground black pepper

  • 1 teaspoon dried thyme

  • 2 large tart apples, such as Granny Smith, cored and cut into wedges

  • 1 cup chicken broth

  • 2 tablespoons apple cider vinegar

  • 1 tablespoon honey

  • 1 teaspoon Dijon mustard

Instructions

  • Preheat oven to 350°F (175°C).

  • Add olive oil and 1 tablespoon of the butter to a large Dutch oven and heat over medium-high heat.

  • Once the butter has melted, add the onion and garlic. Cook, stirring often, until the onion has softened and is turning translucent, about 6 to 8 minutes.

  • Add the pork roast to the pot and season with ½ teaspoon of the salt and the pepper.

  • Cook until the pork is lightly browned on all sides, about 5 minutes.

  • Add the thyme, apples, chicken broth, apple cider vinegar, honey and Dijon mustard. Bring to a simmer and season with the remaining ½ teaspoon of salt.

  • Cover the pot and transfer to the preheated oven. Roast for 45 minutes.

  • Remove the lid and roast for an additional 15 minutes, or until the pork is cooked through and the apples are tender.

  • Remove the pot from the oven and stir in the remaining 1 tablespoon of butter.

  • Taste and season with more salt and/or pepper, if desired.
