Pea Risotto

This Pea Risotto recipe is a delicious and hearty meal that is sure to please your taste buds.

Serves 4

Ingredients

  • 4 cups vegetable broth

  • 2 tablespoons olive oil

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 2 cups Arborio rice

  • 1 cup frozen peas

  • 1/2 cup white wine

  • 1/2 cup Parmesan cheese, grated

  • Salt and pepper, to taste

Instructions

  • Bring the vegetable broth to a simmer in a medium saucepan over medium-high heat. Reduce the heat to low and keep the broth warm.

  • Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic and sauté until the onion is softened, about 5 minutes.

  • Add the Arborio rice and stir to coat with the oil. Cook for 1 minute, stirring constantly.

  • Add the white wine and stir until it is mostly absorbed.

  • Add 1 cup of the warm broth and stir until it is mostly absorbed.

  • Continue adding the broth, 1 cup at a time, stirring constantly and allowing the liquid to be mostly absorbed before adding more. This process should take about 20 minutes.

  • When the rice is cooked through and creamy, stir in the frozen peas and cook for an additional 2 minutes.

  • Remove the pan from the heat and stir in the Parmesan cheese, salt, and pepper. Serve hot.
