Pea Risotto
This Pea Risotto recipe is a delicious and hearty meal that is sure to please your taste buds.
Serves 4
Ingredients
4 cups vegetable broth
2 tablespoons olive oil
1 small onion, diced
2 cloves garlic, minced
2 cups Arborio rice
1 cup frozen peas
1/2 cup white wine
1/2 cup Parmesan cheese, grated
Salt and pepper, to taste
Instructions
Bring the vegetable broth to a simmer in a medium saucepan over medium-high heat. Reduce the heat to low and keep the broth warm.
Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic and sauté until the onion is softened, about 5 minutes.
Add the Arborio rice and stir to coat with the oil. Cook for 1 minute, stirring constantly.
Add the white wine and stir until it is mostly absorbed.
Add 1 cup of the warm broth and stir until it is mostly absorbed.
Continue adding the broth, 1 cup at a time, stirring constantly and allowing the liquid to be mostly absorbed before adding more. This process should take about 20 minutes.
When the rice is cooked through and creamy, stir in the frozen peas and cook for an additional 2 minutes.
Remove the pan from the heat and stir in the Parmesan cheese, salt, and pepper. Serve hot.
