Hearty Vegetable Broth

This hearty vegetable broth is the perfect way to use up your leftover vegetables. It is packed with flavor and is a great way to get your daily dose of vegetables.

Ingredients

  • 1 tablespoon extra-virgin olive oil

  • 1 medium onion, chopped

  • 2 stalks celery, chopped

  • 3 carrots, peeled and chopped

  • 4 cloves garlic, minced

  • 6 cups vegetable broth

  • 1 teaspoon fine sea salt, to taste

  • 1 teaspoon dried oregano

  • 1 teaspoon dried thyme

  • ½ teaspoon freshly ground black pepper

  • 1 bay leaf

Instructions

  • Heat the olive oil in a large pot over medium heat. Once the oil is shimmering, add the onion, celery, and carrots. Cook, stirring often, until the vegetables are softened and beginning to brown, about 8 minutes.

  • Add the garlic and cook until fragrant, about 1 minute. Pour in the vegetable broth, then add the salt, oregano, thyme, pepper, and bay leaf. Raise the heat and bring the mixture to a boil.

  • Once boiling, reduce the heat to maintain a gentle simmer. Partially cover the pot and cook for 30 minutes.

  • Once the broth is done cooking, remove from heat and discard the bay leaf. Taste and season with more salt and pepper, if desired. Serve warm.
