Hearty Vegetable Broth
This hearty vegetable broth is the perfect way to use up your leftover vegetables. It is packed with flavor and is a great way to get your daily dose of vegetables.

Ingredients
1 tablespoon extra-virgin olive oil
1 medium onion, chopped
2 stalks celery, chopped
3 carrots, peeled and chopped
4 cloves garlic, minced
6 cups vegetable broth
1 teaspoon fine sea salt, to taste
1 teaspoon dried oregano
1 teaspoon dried thyme
½ teaspoon freshly ground black pepper
1 bay leaf
Instructions
Heat the olive oil in a large pot over medium heat. Once the oil is shimmering, add the onion, celery, and carrots. Cook, stirring often, until the vegetables are softened and beginning to brown, about 8 minutes.
Add the garlic and cook until fragrant, about 1 minute. Pour in the vegetable broth, then add the salt, oregano, thyme, pepper, and bay leaf. Raise the heat and bring the mixture to a boil.
Once boiling, reduce the heat to maintain a gentle simmer. Partially cover the pot and cook for 30 minutes.
Once the broth is done cooking, remove from heat and discard the bay leaf. Taste and season with more salt and pepper, if desired. Serve warm.
