Creamy Pea Soup

This is a delicious and creamy soup recipe with peas and potatoes.

Serves 4

Ingredients

  • 4 tablespoons butter

  • 1 onion, chopped

  • 2 cloves garlic, minced

  • 2 cups chopped potatoes

  • 2 cups vegetable broth

  • 2 cups frozen peas

  • 1 teaspoon dried thyme

  • 1 teaspoon dried oregano

  • 1 teaspoon dried basil

  • Salt and pepper to taste

  • 1 cup heavy cream

Instructions

  • Melt the butter in a large pot over medium heat.

  • Add the onion and garlic and sauté until the onion is translucent, about 5 minutes.

  • Add the potatoes, vegetable broth, peas, thyme, oregano, and basil. Bring to a boil.

  • Reduce heat and simmer until the potatoes are tender, about 20 minutes.

  • Remove from heat and blend the soup with an immersion blender until creamy.

  • Add the heavy cream and season with salt and pepper to taste.

  • Serve hot with extra cream or a dollop of sour cream, if desired.
