Creamy Pea Soup
This is a delicious and creamy soup recipe with peas and potatoes.
Serves 4
Ingredients
4 tablespoons butter
1 onion, chopped
2 cloves garlic, minced
2 cups chopped potatoes
2 cups vegetable broth
2 cups frozen peas
1 teaspoon dried thyme
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and pepper to taste
1 cup heavy cream
Instructions
Melt the butter in a large pot over medium heat.
Add the onion and garlic and sauté until the onion is translucent, about 5 minutes.
Add the potatoes, vegetable broth, peas, thyme, oregano, and basil. Bring to a boil.
Reduce heat and simmer until the potatoes are tender, about 20 minutes.
Remove from heat and blend the soup with an immersion blender until creamy.
Add the heavy cream and season with salt and pepper to taste.
Serve hot with extra cream or a dollop of sour cream, if desired.
