Broccoli Cheese Tomato Casserole
This delicious casserole is made with broccoli, cheese, and tomatoes. It's a great way to use up leftover vegetables and make a tasty meal in just an hour.

Ingredients
1 head of broccoli, cut into florets
2 tablespoons olive oil
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups shredded cheese of your choice
1 (14-ounce) can diced tomatoes, drained
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
Instructions
Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
Place the broccoli florets in a large bowl and toss with the olive oil, garlic, salt and pepper.
Spread the broccoli in the prepared baking dish and top with the shredded cheese.
Sprinkle the diced tomatoes over the cheese and top with the breadcrumbs and Parmesan cheese.
Bake for 30 minutes, or until the cheese is melted and bubbly and the top is golden brown.
