Broccoli Cheese Tomato Casserole

This delicious casserole is made with broccoli, cheese, and tomatoes. It's a great way to use up leftover vegetables and make a tasty meal in just an hour.

Ingredients

  • 1 head of broccoli, cut into florets

  • 2 tablespoons olive oil

  • 2 cloves garlic, minced

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 2 cups shredded cheese of your choice

  • 1 (14-ounce) can diced tomatoes, drained

  • 1/2 cup breadcrumbs

  • 1/4 cup grated Parmesan cheese

Instructions

  • Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.

  • Place the broccoli florets in a large bowl and toss with the olive oil, garlic, salt and pepper.

  • Spread the broccoli in the prepared baking dish and top with the shredded cheese.

  • Sprinkle the diced tomatoes over the cheese and top with the breadcrumbs and Parmesan cheese.

  • Bake for 30 minutes, or until the cheese is melted and bubbly and the top is golden brown.
